Chicken Breast Stuffed with Berries and Rosemary

Ingredients

  • 4 chicken breasts
  • 5 sprigs of rosemary
  • 120g of red berries
  • 30ml raspberry vinegar
  • 15ml of liquid honey
  • Salt and freshly ground pepper
  • 40ml mustard
  • 40g butter
  • 15ml oil
  • Pics of wood (toothpicks) or cooking rope

Instructions

  1. Preheat oven to 350 ° F (180 ° C).
  2. Spread flat the chicken and try it on the top side for thickness, then position it from left to right and open like a wallet.
  3. Open the breasts to the right.
  4. Proceed in the same way from the center to the left (thus working the lower tier). You get a separation into three parts. Thinner and easier to fill.
  5. In a bowl, combine the berries, vinegar and honey, seasoning.
  6. Brush the inside of the meat with the mixture and top with mustard beans and fruits.
  7. Close the breasts and stitch to hold the filing.
  8. In a frying pan, brown the stuffed rolls in butter and oil.
  9. Transfer to a baking sheet and bake for 20-25 minutes.
